Source: http://www.fannetasticfood.com/2016/03/16/walnut-and-mushroom-vegetarian-enchiladas/

Thank you to the California Walnuts Commission for sponsoring this post!

Whether you are vegetarian or not, you’ll love today’s new recipe: Walnut and Mushroom Vegetarian Enchiladas. Surprisingly “meaty”, and satisfying thanks to all the veggies, this will be your new favorite weeknight meal. It makes plenty of leftovers for packed lunches and is officially approved by my taste tester and meat-loving husband, too! :)

Vegan? Simply leave off the cheese on top – they’ll be just as delicious without it. And if you’re gluten free, this recipe is, too – just be sure to use gluten free certified corn tortillas and enchilada sauce.

What’s Really Going on When Someone Seems “Too Sensitive”

Crying Eyes

“For a seed to achieve its greatest expression, it must come completely undone. The shell cracks, its insides come out and everything changes. To someone who doesn’t understand growth, it would look like complete destruction.” ~Cynthia Occelli

The whole time I was growing up, I was told, incessantly, that I was “too sensitive.” These words, when I first heard them, came from the mouth of the person I vowed I would never become.

And yet, as I grew up, these words didn’t stay within the darkness of my childhood home. They began to roll out of the mouths of kids on the playground, boyfriends, classmates, friends.

“Wow, you’re really touchy.”

“You’re so emotional.”

“You’re turning really red. Are you, like, really offended right now? You should take a chill pill.”

“You can’t take a joke.”

Often, my reaction was to a joke—an insulting one. I’ve never liked insult humor, and yet it’s followed me throughout my life. It was (and still is) there in my Eastern European origins and it was there every step of the way when I came to Canada as an immigrant.

They were right. I just couldn’t take a joke.

Each time this would happen, I would own it. Yes, I was too sensitive. It was my fault. I had to try to …

NYC Weekend Adventures

Source: http://www.fannetasticfood.com/2016/03/21/nyc-weekend-adventures/

Hello, my friends! I had quite the weekend up in NYC for my future sister-in-law Morgana’s bachelorette festivities! The city that never sleeps lived up to its name, that’s for sure. :)

Before I get into my weekend recap, I wanted to share that my Nutrition for Runners co-author shared a great case study on his blog last week from a runner who tried our program! Click here to read the post and hear how Aaron went from thinking he wouldn’t be able to do another marathon to "hardly ever feeling tired." So exciting to hear we are helping runners make eating healthy and fueling right easier and way less complicated – no calorie counting necessary!

Anyway – back to the weekend fun!

Morgana is marrying Matt’s younger brother Drew in a month, and it was a blast to get to celebrate this weekend with her and her friends. I hadn’t met any of the other girls until this weekend but everyone was really friendly and welcoming – it will be so fun to see them all again at…

My Most Important Productivity Method

Source: http://zenhabits.net/productivity/

By Leo Babauta

You can read entire books on productivity, dozens of blog posts, and implement half a dozen different productivity systems. But at the end of the day, you’d have gotten nothing important done.

The truth is, productivity is fairly simple, in theory. Even if you have an overwhelming amount to do, the steps aren’t hard to figure out:

Pick something important to work on (a task from your most important project, perhaps). What you pick doesn’t really matter, because you’ll get the rest soon.
Focus exclusively on that task for a bit, finishing it if you can.
Pick another important task after that, and repeat.

And of course, take breaks. Walk around. Do some yoga. Meditate. Eat something healthy. Socialize. But when you’re going to work, focus on something important, and try to get it done. You might think you have too much to do, but in truth, all you can really do is focus on one thing at a time.

So if it’s so simple, what’s getting in the way? Fear.

Some of the fears that get in the way of executive the productivity steps above: fear of failure, uncertainty, incompetence, discomfort, not having control control.

In fact, we fear only one thing really: not having control, certainty, security, comfort. Those are really all the same thing (certainty). All of our fears come from that.

We don’t like to feel these fears. So we avoid them, trying to seek control, certainty, comfo…

Can You Imagine a Minimalist President?

Recently on Twitter, a reader asked whether we could imagine electing a minimalist president.

Yes, but we don’t have to imagine: his name was Calvin Coolidge, the 30th president of the United States of America. During the 67 months of his presidency, the national debt, the federal government, the federal budget, unemployment, and consumer prices shrank—and the GDP expanded significantly. All of this led Amity Shlaes, in her biography, Coolidge, to blazon “Silent Cal” as a “rare kind of hero: a minimalist president, an economic general of budgeting.”

But perhaps the best way to understand Coolidge’s minimalist ways is through his own words:

On contribution: “No person was ever honored for what he received. Honor has been the reward for what he gave.”

On spending: “There is no dignity quite so impressive, and no one independence quite so important, as living within your means.”

On wealth: “Prosperity is only an instrument to be used, not a deity to be worshipped.”

On listening: “It takes a great man to be a good listener.”

On focus: “We cannot…

Zika Could Spread to the U.S. This Summer—Should You Be Worried?

Source: http://greatist.com/live/zika-could-spread-to-the-us-this-summer-should-you-worry?utm_source=rss&utm_medium=rss&utm_campaign=feed_http–greatistcom-

Health officials predict the Zika virus will spread to the U.S. this summer, and the map below shows the states most at risk for an outbreak. (Red indicates high risk, orange moderate risk, and yellow low risk.)

If you spend any time watching CNN, this news is enough to make you invest in a hazmat suit. And yes, the possible linkage to microcephaly (a condition that causes babies’ heads to be smaller than normal and is associated with developmental problems) is frightening. But the CDC says that unless you or your partner are pregnant or trying to get pregnant, there’s no need to be on high alert.

Here’s a handy cheat sheet to help you protect yourself from the virus (or simply stop freaking out!):

If you’re pregnant: The CDC recommends canceling or postponing trips to any countries with a Zika outbreak. Pregnant women aren’t more likely to contract the virus, but as we’ve already mentioned, there is a possible link between Zika and birth defects. If a Zika outbreak occurs where you live, consult your doctor and limit your chances of being bitten by a mosquito (wear long sleeves and pants, use an EPA-registered insect repellent, and stay in places…
