This Moment is Enough

I was in a plane descending into Portland for a quick stopover, and I gazed upon a brilliant pink sunrise over blue and purple mountains, and my heart ached.

Instinctively, I looked over to Eva to share this breath-taking moment, but she was sleeping. I felt incomplete, not being able to share the moment with her, or with anyone. Its beauty was slipping through my fingers.

This was a teachable moment for me: I somehow felt this moment wasn’t enough, without being able to share it. It took me a second to remind myself: this moment is enough.

It’s enough, without needing to be shared or photographed or improved or commented upon. It’s enough, awe-inspiring just as it is.

I’m not alone in this feeling, that the moment needs to be captured by photo to be complete, or shared somehow on social media. It’s the entire reason for Instagram, for instance.

We feel the moment isn’t enough unless we talk about it, share it, somehow solidify it. The moment is ephemeral, and we want solidity and permanence. This kind of groundlessness can scare us.

This feeling of not-enoughness is fairly pervasive in our lives:

We sit down to eat and feel we should be reading something online, checking messages, doing work. As if eating the food weren’t enough.
We get annoyed with people when they don’t act as we want them to — the way they are feels like it’s not enough.
We feel directionless and lost in life,…

Reinventing Dessert: Espresso Chocolate Brownies

Sometimes you need a hug. Other times, you just need a brownie.

While we believe that desserts and snacks are a part of life, it’s understandable if some people want healthier versions of their favorite desserts. The trick: make substitutions that might sound like they won’t work, but when you taste the final product, you’ll never even realize the changes you made. Which is why we create things like protein ice cream or this recipe, espresso chocolate brownies.

This brownie recipe is a flourless version of the classic dessert. A traditional brownie is roughly 250 calories. This “healthy” recipe is about 60 percent fewer calories without any added sugar.

Enjoy these delicious treats to satisfy your nighttime cravings or store in the fridge and pack it in your lunch for a midday snack to keep you far (far) away from the break room donuts.

Why it’s a Healthy Recipe

Black beans—not-your-average main brownie ingredient—are a staple protein source for many non-meat eaters. Translation: you can eat more than one serving without loading up on too many calories. These legumes are also high in fiber, which helps aid digestion, and a great source of folic acid, magnesium, potassium, and iron.

We probably rely on Tylenol more than we should. Sore after a hard workout? Pop a pain reliever. Hungover? You guessed it. In fact, the Consumer Healthcare Products Association estimates that 23 percent of all U.S. adults consume a drug containing acetaminophen—the active ingredient in Tylenol—every week.

So when a recent study showed acetaminophen stops you from feeling others’ pain, you can bet it got a lot of people’s attention. But are we really all now cold and unfeeling because of a common pain reliever? Not necessarily.

The study consisted of just two small experiments—the first surveyed 80 college students and the second, 114 college students. “In order to come to such a sweeping conclusion, the sample size needs to be in the thousands and needs to be taken out of the insular walls of a college and conducted in the real world,” says Bola Oyeyipo, M.D., of Healthgist.com.

Nesochi Okeke-Igbokwe, M.D., M.S., of New York University Hospitalist Group, had a similar reaction. “The bottom line is that further research is still needed on this topic before coming to any definitive conclusions,” she says.

It’s also important to note that the changes observed were minimal, so even if Tylenol does affect empathy, it probably wouldn’t be noticeable.

1) Girls’ night dinners.

My college friends Kathleen, Sarah, and I have been hosting fun dinners for each other every month or so, alternating who hosts. (When I had them over awhile ago, I made Thai Coconut Chicken Soup which was a big hit!) Last night, Kathleen hosted us at her place and made an amazing quinoa tabbouleh (packed with mint, parsley, and bright lemon zest and juice – delicious) with lamb kabobs. Amazing! Thanks for having us, Kathleen! So fun to catch up with you both. :)
