A food dehydrator seems like something only raw foodies and extremely experimental eaters would find essential in their kitchens—especially at the $200 price tag some models tout. But when I learned of Excalibur’s 6-tray dehydrator, which retails for a modest $39.95, I was intrigued to learn more about the possibilities of dehydrating. It turns out, you can dehydrate pretty much anything, from meats to nuts to fresh produce. Fruits and veggies are a good entry point, and while they certainly can be enjoyed plain, I thought dressing them up with a touch of seasoning would make them a little more exciting. These sweet and savory barbecue zucchini chips make a perfect snack when you’re craving something crunchy and savory. Plus, you’ll take in a serving of vegetables, zero fat, and almost no sodium with each handful.
